August may be over, but even with kids going back-to-school, the mocktail is still all the rage. Plus, an infusion of CBD in this refreshing beverage makes it more beneficial than ever. This new take on an old favorite is simple, yet elegant.
This recipe can be modified to use nearly any fruit or berry you have on hand, so don’t be shy about creating your own delicious flavor combinations. The secret is in the ice cubes. We’ve frozen the CBD right into the cubes, so each drink gets an equal portion of CBD goodness. Served on a hot day, it’s just the thing for some added hydration.
Makes approximately four servings
- One small watermelon (seedless is easiest)
- Fresh lemons of limes
- Fresh mint leaves
- Flavorless CBD oil or isolate powder
- Ice cube mold
The first thing to do is to make the cubes. Cut the whole watermelon into small pieces and place about a third of them into the blender along with your desired amount of CBD. You will be using three cubes per mocktail, so think about how much CBD you will want for each drink. (For example, if you want each to contain 10 mg of CBD, use 40 mg for the entire recipe.
Blend the watermelon and CBD until pureed and pour the mixture into your ice cube tray. Add a mint leaf to the top of each cube. Freeze until the cubes are solid.
Take the remaining watermelon and puree it separately. Once it is thin enough to pour, strain through a cheesecloth or colander to separate the juice from the pulp. Squeeze in some fresh lemon or lime to taste, and then chill the mixture.
When you are ready to assemble your mocktails, add the frozen cubes to a glass and pour the watermelon juice over the top. If you want a bubbly variation, add some seltzer.
